1 package Emma Penne Pasta

¼ cup Emma Extra Virgin Olive Oil

1-2 cloves Garlic, minced

1 pint Cherry Tomatoes, cut in half

250 g Bocconcini, torn into pieces the same size as the tomatoes

1 bunch Basil, roughly chopped

Juice and zest of 1 lemon

Salt & Pepper to taste


  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.

  2. While the pasta is cooking, prepare the rest of the ingredients in an extra large bowl. Add a generous amount of salt and pepper to help break down the tomatoes.

  3. When the pasta is finished cooking, drain and toss into the large bowl with the rest of the ingredients, letting the warm pasta absorb all the flavour.

  4. Finish with more extra olive oil and serve warm or at room temperature.
