Agrodolce Carrots

Prep TIme: 15 minutes

makes 1 L mason jar 

Agro-dolce means “sweet and sour”. These pickled carrots are a delicate balance between sweet and sour with a hefty glug of red wine for good measure. Enjoy with super thinly sliced salumi (Italian deli meats).


1 lb carrots

100 ml Emma Red Wine Vinegar

100 ml dry red wine

100 ml water

1 tsp sugar

2 tbsp salt

3 tbsp Emma EVOO

1 bay leaf


  1. Wash, peel and cut carrots into sticks. Set them aside while you prepare the pickling liquid.

  2. Bring the rest of the ingredients to a boil and cook the carrots in the liquid for 5 minutes.

  3. Drain, reserving the cooking liquid. Pack the carrots and the bay leaf into the mason jar, and cover with the cooking liquid.

  4. Close the lid tightly and store upside down to seal. Let it sit at least 5 days before eating. Once opened, it will last in the fridge for 2 weeks.
