Tonnato Sauce

If Caesar salad dressing had a tastier, sultrier, Italian cousin, it would be Tonnato sauce. The idea of 2 types of fish blended into mayonnaise may sound unappetizing, but I assure you, this umami rich, velvety, concoction is an absolute dream. It’s traditionally served over cold, braised veal, a dish called Vitello Tonnato. It’s super old school, and kind of unfashionable (the food equivalent to cargo pants). At Emma Foods, we say: Eat (and wear) what brings you joy! This sauce most certainly will… and don’t limit yourself to veal. Slather it over any protein, hot or cold, upgrade your usual sandwich spread with a generous smear, dip your veggies in it, spoon it over a poached egg, lick it off a spatula, the possibilities are endless!


80 g can Tuna

2 EMMA Anchovy Fillets

3/4 cup Mayonnaise

1 tbsp EMMA White Wine Vinegar

1 tbsp EMMA Capers

q.b. Salt and Pepper


  1. In a food processor, blend the tuna, anchovy, mayonnaise, white wine vinegar, and the capers together.

  2. Taste and adjust the seasoning.
