Dairy-Free Shortbread Cookies Infused with Earl Grey Tea and Lemon

3 cups AP Flour

1 cup sugar

1 tablespoon Earl Grey Tea Leaves

Pinch of salt

Zest of 1 lemon

1  cup Emma Extra Virgin Olive Oil


  1. Add the first 5 ingredients to the bowl of a stand mixer fitted with paddle attachment. Turn it on low for a few seconds to incorporate.

  2. Slowly drizzle in the EVOO until it forms a pasty dough.

  3. Roll into log shape and chill for 30 minutes. Slice them into ½ inch disks and arrange on a cookie sheet

  4. Bake on 350 ° F for 18 – 20 mins. Let cool for 15 mins and serve.
