Cauliflower Mash

We try not to think of our recipes as “alternatives”, or “the healthy version”. We’re not here to cut out certain foods, rather to add more variety.

Ingredients

1 Head Cauliflower, cut into florets

2 tbsp Butter

1 cup EMMA Parmigiano Reggiano, grated

1 cup EMMA Mascarpone Cheese, room temperature

Pinch Nutmeg, ground

Salt and Pepper, to taste

Directions

  1. Boil the cauliflower in a large pot of salted water until very tender, on the verge of mushy, approx 8-10 minutes.

  2. Drain and transfer to a food processor and blend with the rest of the ingredients, until smooth. Taste and adjusting the seasoning as necessary. Serve as you would mashed potatoes, alongside roasted or braised meats or under a mountain of gravy.
