Cassava Puffs

Cassava, or yuca, is a starchy tuber vegetable. Like a potato, only starchier. It’s available pre-cooked and frozen in most supermarkets, which makes life infinitely easier as the uncooked version looks like a thick tree branch surrounded by deep brown bark. This dish is an excellent alternative to salty, carb-y bar snacks that contain gluten.

Ingredients

1 lb cooked cassava, mashed

1 cup Emma Parmigiano Reggiano cheese, finely grated

3 tbsp Emma Extra Virgin Olive Oil, plus some to coat your hands

1 egg, whisked 

2 garlic cloves, minced

Zest of 2 limes

Salt & Pepper to taste

Directions

  1.  Preheat oven to 400˚ F.
  2. In a large bowl, mix together all of the ingredients to form a paste.
  3. Rub some olive oil on your hands and form little 1 inch balls and place them on a lined baking sheet.
  4. Bake until golden brown and crisp, about 20 minutes. Serve hot.
